  • Responsibilities

    The Village of Wilson Culinary Training Program (CTP) is a flexible program that teaches apprentices skills through a mix of demos, practical, and hands-on rotations in various venues and outlets on the property.

    The program is a comprehensive orientation to all aspects of food and beverage within Wilson from casual, upscale, to banquets and special celebrations.

    The CTP is a series of hands-on rotations to different venues and positions. Apprentices rotate through The Café’ and The Grange, as well as Banquets/Catering. At times, these rotations and plan of study may vary slightly, based on guest needs, but the structure, foundation, and integrity of the program always stays the same.

    We offer one month, three months, and other custom programs including up to 18-month residencies.

    Wilson offers housing within walking distance of where you will be creating your magic each day.

    By the end of the program, individuals will have developed skills in an array of areas including menu planning, stocks, sauce making, gastronomy, classical cuisine, regional and international cuisine, food and wine pairings, butchery, cold food displays, and leadership.

    As a server assistant, you help set the standards by which our restaurant is viewed, in your personal appearance, your disposition, and your attitude towards the guest. You are always in full view of the guest. You only get one opportunity to make a great first impression. Good communication skills are a must. Your working relationship with the entire staff is vital to the operation of the restaurant. You must be able to anticipate guest’s needs, as well as communicate those needs to the service staff. Maintaining a positive attitude and be able to maintain that attitude in any situation. Our goal is to over-exceed guests expectations while working as a team.

    Responsibilities

    • Deliver exceptional hospitality to our Guests
    • Tailor our Dining Room for Guests by cleaning and resetting tables
    • Assist Servers with food delivery

    As an expo, you set the standard for our guests by which our restaurant is judged. Your appearance, your knowledge of the food, and your attitude. Each table and guest are looking for something that can’t be found close to home. It’s our job to make sure they get that experience throughout the course of them being here.

    Responsibilities

    • Station should always be cleaned and sanitized
    • Assist with cleaning appliances
    • Wipe down tea station
    • Know desserts to tell servers and the time of line up
    • Check that all condiments are full and ready for service
    • Communicate between servers and line cooks

  • Job Summary

    The role of Sous Chef is responsible for planning and directing food preparation in a kitchen. This will involve a large degree of supervising other kitchen staff. As assistant to the Executive Chef, the Sous Chef will help with menu planning, inventory, and managing supplies. Additionally, the Sous Chef will aid in making sure the kitchen is up to safety standards and that staff are obeying sanitation rules. During mealtimes, it is important that the Sous Chef be quick on his/her feet and be able to make smart decisions instantly.

    Job Responsibilities

    • Prepares food to specifications before and during operations.
    • Properly measures and portions all food items. Complies with all portion sizes, quality standards, department rules, policies, and procedures.
    • Utilizes kitchen equipment to prepare food items such as knives, slicers, whips, pots, pans, warmers, steamers, grills, ovens, etc.
    • Ensures proper food temperatures are maintained and food is stored correctly.
    • Ensures freshness and quality of all menu items.
    • Packages all products to proper specifications.
    • Performs opening, closing, and side work duties as instructed and according to proper guidelines.
    • Keeps workstation and equipment clean, organized, sanitized, and sufficiently stocked.
    • Follows and upholds all health codes and sanitation regulations.
    • Sets up and operates kitchen equipment.
    • Uses waste control guidelines and records all waste on a spoilage sheet.
    • Manage all activities in the kitchen, including food preparation and production, and management and training of kitchen staff.

    • Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order

    Education and Experience

  • Job Summary

    The role of Cook is responsible for assisting in the preparations of menu items and daily kitchen operations. This position is also expected to assist in maintaining the kitchen equipment while remaining conscious of inventory levels and ensuring compliance with safety policies and procedures.

    Job Responsibilities

    • Properly execute as a member of the line staff by working constantly and cohesively in a variety of cooking methods to assure timeliness, efficiency, and product integrity
    • Demonstrate exemplary work ethic, technique, and productivity as a team member, and assist others when necessary.
    • Follow standardized recipes.
    • Follow all instructions pertaining to the food service operation assigned by the Supervisor.
    • Determine proper cooking times, temperatures, and cooking methods.

We are looking for someone to help at the Grange which entails coffee barista, ice cream attendant, and managing cash register sales. In addition to the above responsibilities, duties may include but are not limited to; running food to tables, cleaning off tables, helping prep items in the kitchen, and assisting with light housekeeping responsibilities (sweeping, moping, assisting with dishes).
